Scallops Recipe

    Scallops are a delicious and sustainable type of seafood that you can enjoy as an entrée or as an addition to other dishes like pasta. This scallops recipe is made with fresh herbs and butter, a classic combination that is simply irresistible.

    When shopping for scallops, you want to look for pearly white, moist scallops. Scallops shouldn’t be completely dry nor should they be dripping wet.

    To prep scallops, all you need to do is rinse them under cold running water then pat them dry.  You don’t have to worry about any stubborn sand or grit on them like you do with other types of seafood, such as mussels.

    The trick to cooking scallops is to not over-cook them. Scallops easily become tough and chewy when you cook them too long. Instead, cook them briefly in a hot cast iron skillet for about a minute or so on each side.

    To give this scallops recipe the winning edge, make sure you dry your scallops very well before searing them in the pan. This way, you’ll get a beautifully golden, crisp exterior.

    Instructions

    1. Heat oil in a cast iron skillet over medium-high heat.
    2. Season the scallops with a small pinch of salt and pepper. Place the scallops in the pan and cook until deep golden brown on one side, about 1 1/2 minutes. Turn the scallops and add the butter and fresh herbs.
    3. Continue cooking for another minute or so, spooning butter over the scallops often, until the scallops are cooked through.
    4. Serve scallops with lemon slices.
