    Taquitos, which are basically rolled up tacos, are a tasty appetizer or light meal to enjoy when you’re craving Mexican-style cuisine and a good crunch in your food.

    Traditionally, taquitos are filled and rolled before they’re fried in hot oil. The frying process is what gives the tortilla component its pleasurable crunch.

    To make our taquitos healthier and avoid frying, we like to bake our taquitos in the oven. Not only is there less oil involved, but the taquitos come out just as crunchy and delicious.

    You can fill taquitos with any kind of meat that you like, but for this recipe, we used chicken. For a vegetarian or vegan-friendly option, you could use black beans instead.

    The best part about making a taquitos recipe at home is that you can top it with whatever tasty additions that you like. Our baked taquitos are usually served with guacamole, cheese, and freshly diced tomatoes.

    1. Preheat the oven to 425°F. Grease a baking sheet with oil or cooking spray.
    2. Add the shredded chicken, spices, seasoning, and fresh lime juice to a large bowl. Stir until the chicken is covered in this marinade. Add the cheese and stir to combine. Temporarily set aside.
    3. Place 2 tortillas in between 2 sheets of paper towel, then transfer to the microwave and heat for 20-30 seconds. Remove from the microwave and roll up the tortillas. Repeat with the rest of the tortillas.
    4. Working with each tortilla, gently unroll the tortilla and place a little bit (about a heaping tablespoon worth) of the chicken and cheese mixture in the center of the tortilla, then roll it up tightly. Place the taquito onto your greased baking sheet, seam-side down. Repeat for the remaining tortillas.
    5. Brush a little bit of oil over the rolled up taquitos or spray them with cooking spray. Bake for 15-20 minutes or until the taquitos are golden brown and crispy. Serve the taquitos with any toppings you desire.
