Ingredients
- 1 tbsp vegetable oil
- 1 lb ground Italian Sausage
- 1/2 cup diced onion
- 1 tbsp minced garlic
- 1 can crushed tomatoes 28 oz.
- 1 box of vegetable/chicken broth 32. oz
- 2 tbsp fresh chopped basil
- 1 tsp salt
- 1/2 tsp pepper
- 1 package refrigerated tortellini 9 oz.
- 2 cups packed fresh spinach
Instructions
- Place a dutch oven or heavy-bottomed pot over medium-high heat. Add the oil, then once hot, add the diced onion. Sauté the onions until they're soft and translucent.
- To the pot, add the Italian sausage and use a wooden spoon to break apart into crumbles. Add the garlic and cook the mixture until the sausage is no longer pink.
- Add the crushed tomatoes, vegetable broth, basil, salt and pepper. Raise the heat to high to bring this mixture to a boil. Once boiling, reduce the heat to low and cover the pot. Cook for 25 minutes.
- Add the tortellini and spinach, then let the mixture cook for another 10 minutes until the pasta is tender. Serve hot.
