Zucchini Fries Recipe

    Rather than simply grill your zucchini and serve it sliced up, why not make these scrumptious zucchini fries instead? These zucchini fries are so yummy that even kids will love this healthy side dish!

    While traditional fries are made with potatoes, these zucchini fries are made with — you guessed it — zucchini. This green summer veggie is cut up into thick matchstick pieces and coated in seasoned breadcrumbs and yummy parmesan cheese.

    Not only are these zucchini fries healthier than traditional French fries because of the swap for veggies, but these zucchini fries are also baked rather than fried.

    You only need a handful of ingredients to make this recipe, including the zucchini, breadcrumbs, parmesan, a little salt, and some melted butter. The kids can help you dip the zucchini sticks into the butter and crumb coating, making the prep for this dish a family affair.

    1. Preheat the oven to 425°F. Line a baking sheet with parchment paper or grease the baking sheet with cooking spray very well.
    2. Cut the zucchini in half lengthwise and remove the seeds. Then continue cutting the zucchini to create 1/2" thick pieces that are about 4 inches long.
    3. Pour the breadcrumbs, parmesan, and salt onto a plate. Toss together to combine. Place a bowl with the melted butter next to the plate.
    4. Dip each zucchini piece into the melted butter, then roll around in the plate. Make sure you cover the zucchini in the crumbs as well as you can. Then place the zucchini onto the prepared baking sheet.
    5. Bake the zucchini fries for 15 minutes until golden and crisp. Serve with a side of marinara sauce.
